This salad is delicious on its own or served on top of grilled chicken.
INGREDIENTS (serves 4):
- 1 large, seedless cucumber, diced
- 1 box grape tomatoes, halved
- 1 small yellow bell pepper, diced
- ½ cup diced red onion
PREPARATIONS:
- In a large bowl, toss together all the vegetables. Add the lemon juice, olive oil, and parsley and mix thoroughly to coat.
- Season with salt and pepper. Serve cold, or at room temperature.
