INGREDIENTS (serves 6):
DONUTS
- 1 cup super fine almond flour
- 1/3 cup stevia
- 1/2 cup (2 scoops) Chocolate 20/20 Fiber/Protein Powder
- 2 tsp baking powder
- 2 Tbsp cocoa powder
- Pinch sea salt
- 2 Tbsp coconut oil
- 1 large egg
- 2 egg whites
- 1/4 cup unsweetened vanilla almond milk
FROSTING
- 1/8 cup (1/2 scoop) Vanilla 20/20 Fiber/Protein Powder
- 1/3 cup stevia
- 1/4 cup almond milk
- 1/4 tsp xanthan gum
PREPARATIONS:
- Preheat oven to 350°F. Lightly coat a silicon donut mold with nonstick cooking spray and set aside.
- In a large bowl, combine almond flour, stevia, 20/20 powder, baking powder, cocoa powder and sea salt.
- In separate smaller bowl, whisk the eggs, almond milk and coconut oil together, until well combined. Pour mixture into the larger bowl of dry ingredients and whisk until a well combined batter has formed.
- Pour batter into prepared donut mold, so that each mold is 3/4 full, and place in oven to bake for 20-25 minutes (or until an inserted toothpick comes out clean. Remove mold from oven and allow to cool until donuts are easy to remove from the molds.
- While donuts bake and cool, prepare frosting by stirring together frosting ingredients in a small bowl.
- Once donuts have cooled completely, frost donuts by dipping one by one into prepared frosting glaze.
