Perfect for Thanksgiving or any Fall gathering! Garnish with a dollop of SoDelicious CocoWhip dairy-free coconut whipped topping, or your favorite whipped topping and a sprinkle of cinnamon.
INGREDIENTS (serves 6):
- 3 cups fresh apples, sliced
- 1/2 cup granulated monk fruit sweetener
- 1 1/4 tsp cinnamon
- 1 tsp lemon juice
- 1/8 tsp nutmeg
- 1/2 cup (2 scoops) Unflavored or Plant-Based 20/20 FIBER/PROTEIN powder*
PREPARATIONS:
- Preheat the oven to 350°F. Coat 6 ramekins with nonstick cooking spray. Set aside.
- In a small bowl, combine sliced apples, ¼ cup granulated monk fruit sweetener (you should have 1/4 cup remaining), 1/4 tsp cinnamon (you should have 1 tsp cinnamon remaining), lemon juice, and nutmeg. Toss so that apple slices are evenly coated. Set aside.
- In a separate bowl, combine 20/20 powder of choice, almond flour, psyllium husk, remaining cinnamon and monk fruit sweetener, baking powder and salt.
- Add coconut oil, almond milk and vanilla. Mix to create a crumble topping. Set aside.
- Divide apple mixture between the prepared ramekins. Spoon crumble mixture atop each.
- Place ramekins on a sheet pan and place in oven to bake for 12-16 minutes, checking for desired crispness.
- Remove from oven and allow to cool for ~5 minutes. Garnish as desired.
