Deep into week two of the 2012 Summer Olympics, there is no doubt that Olympic fever has surely swept the nation. People all over are dressing head to toe in LuLu Lemon, hitting the gym, pumping iron and just downing protein shake after protein shake. Crazy? Maybe. But we can’t say this is the worst thing either. Diets high in protein are crucial for athletes, as they repair and rebuild muscle that is broken down during exercise. Protein isn’t bad for weight loss either. Protein is digested slowly, so it keeps you fuller for a long period of time, keeps serum glucose levels constant which prevents you from crashing and craving refined unhealthy snacks, and improves energy throughout the day. Therefore, in the spirit of Olympic fever we have for you the “Yeah I’m Training for the 2016 Summer Olympics Omelet”, otherwise known as the F-Factor Super-High Protein Omelet. Make this and who knows maybe you will be the next (or make out with) Ryan Lochte.

Ingredients:

  • nonstick cooking spray
  • 1/4 cup onions, chopped
  • 1/4 cup black beans
  • 1/4 cup red peppers, chopped
  • 1/4 cup frozen spinach, thawed
  • 2 egg whites and 2 eggs, beaten with a dash of salt and pepper
  • 1/4 cup Kraft low-fat shredded cheddar cheese

Directions:

  1. Coat a pan with nonstick cooking spray and place over medium heat. Add onions and saute until translucent, approx 3 minutes.
  2. Rinse black beans with water and add to pan.
  3. Add red peppers and spinach and continue cooking until spinach is wilted.
  4. Pour eggs over vegetables and tilt pan until the eggs cover the entire surface.
  5. Sprinkle cheese over top and when eggs are set, fold omelet in half, and serve.
