To symbolize a sweet new year, it is a Rosh Hashanah tradition to dip apples in honey at dinner. Since one apple is just around 60 calories with 4-5 grams of fiber, I like to expand on this tradition, and take advantage of the fall produce, by incorporating apples into desert as well. This recipe for Baked Apples is always a winner at my High Holiday dinners, is super easy to make, and screams fall flavor. With hints of pumpkin, cinnamon, and vanilla, it’s one that I can whip up for every festive occasion, September through December.

Ingredients:

  • 2 apples, any kind
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon splenda (or brown sugar)
  • 1 teaspoon vanilla extract
  • 2 teaspoons water

Directions:

  1. Preheat oven to 375.
  2. Slice apples into thin slices or cubes.
  3. Place apples in a bowl and add the rest of the ingredients. Toss apples to coat.
  4. Place apple on a baking sheet and bake for 30-45 minutes or until browned and soft
