Tomorrow is Cinco De Mayo. Celebrate Asian style this year with our favorite taco recipe! If you want more of a kick, serve with Tabasco mild jalapeno green pepper sauce.

Ingredients:

  • 3 boneless, skinless, chicken breasts
  • salt and pepper, to taste
  • 2 teaspoons extra virgin olive oil
  • 1 (1.5 oz) package taco seasoning
  • 1 small yellow onion, chopped
  • 1 bunch cilantro, chopped (save some for garnish)
  • 3/4 cup low-sodium soy sauce
  • 1 package small whole wheat tortillas
  • 1 (8 oz) can pineapple chunks
  • 1 lime

Directions:

  1. Cut chicken into bite-sized cubes and season with salt and pepper.
  2. Add olive oil to a large sauté pan and place over medium-high heat.
  3. Once warm, add chicken and taco seasoning. Allow to cook for 6-7 minutes.
  4. Lower the heat to medium and add onions, cilantro and soy sauce.
  5. Cover. Reduce heat to medium low and cook until chicken is cooked through and has a nice orange color (about 8 minutes more).
  6. While chicken is cooking, warm up tortillas in oven and cut the lime into four wedges.
  7. Place tortillas flat on a plate and fill with chicken and pineapple, placing fresh cilantro on top.
  8. Squeeze lime and a dash of Tabasco if desired), roll up the tortillas.
  9. Follow with a shot of tequila.
